Got Tomatoes? - A Summer Recipe

This summer I actually have ripe tomatoes! In the past (when I've bothered to plant anything), I tend to start too late in the growing season, which in Wisconsin is pretty short anyway, and I end up salvaging green tomatoes off the vine when the first freeze comes. This year I actually had to worry about using up my tomatoes before they got TOO ripe!

So I tried the recipe for Bread and Tomato Salad from the Sundays At Moosewood cookbook.
Ingredients - September 2, 2010
INGREDIENTS:
2 cups dried bread cubes (about 1/2" cubes)
2 garlic cloves minced
3 tablespoons olive oil
2 cups chopped tomatoes
1 tablespoon chopped fresh basil
1 tablespoon lemon juice
salt & pepper to taste

In a large skillet, saute bread cubes and garlic in olive oil until garlic starts to color and bread has absorbed most of the olive oil. Put the bread in a large dish and add remaining ingredients and mix. The bread does get pretty soggy, and toasting helped somewhat before sauteing. (I admit to eating this with my fingers ;o)

That sounds yummy.

This is my current I-have-tomatoes-to-use recipe. (Eating some as I type, in fact.)

Quinoa w/ Tomato and Pecorino Romano

1 cup quinoa
2 cups water
1 cup of chopped tomatoes
1 cup pecorino romano (finely grated)
pinch of garlic power
pinch of Kosher salt

In a small to medium size pan bring quinoa and water to a boil, reduce to a simmer and cover for about ten minutes or until water is almost fully absorbed.

Chop tomatoes (I prefer cherry or grape tomatoes for a little extra sweetness, but any variety of tomato works.)

Right before all the water is absorbed, remove pan from heat, then add tomatoes. The idea here is to make a tomato water that the quinoa can absorb. Cover and let it sit for a few minutes until the quinoa has fully absorbed everything.

While the quinoa is still warm...

Toss in garlic and salt.
Toss in cheese.
That's it!

Mmm, yum, Anne! (Of course everything is better with cheese and garlic) I was going to include the recipe for Tomato Spice Tea Bread as well, but didn't have any photos to go with :D

Thanks for the award, Cheryl! I wish I could have made it to AFA in Rochester - I really need to start saving up for Portland, OR :D
